Ingredients
- 1.8 litres/3pt beef stock
- 1 teaspoon finely chopped lemon grass
- 2 teaspoons light soy sauce
- 175g/6oz vermicelli, broken into small pieces
Ways of Working
- Bring the stock to the boil with the lemon grass and soy sauce.
- Add the vermicelli and simmer for 6 minutes or until the noodles are just tender. Serve hot.
